Although every day for me is meatless “Monday” I like to challenge my friends and family who eat meat every day to one meatless or meat free day of the week. It just so happens that Meatless Monday has a nice, catchy ring to it. An example of what our most recent dinners are looking like and so quick and easy to pull together.
When the winter months roll around please don’t feel like its time to bust out the crockpot and bunker down for a season of protein and potatoes, although I do love some potatoes. This Colorful Warm Quinoa Salad is filled with plenty of raw and crisp fruits and vegetables and the savory yet sweet dressing pulls it all together for one amazing meal or side dish.
Tacos, tacos and more tacos. That is always a request for dinner in our home. I don’t know why I bother to ask anymore because that is a favorite. No complaints here though because I love Mexican Food and tacos AND bowls. I know this has both tomato and avocado which are technically fruits but I just can’t go without calling this a Veggie Taco Bowl.
If you visit and stay for dinner which I would love it is highly probable that you will have something in a bowl. In some form or fashion balanced bowls frequently make their way to our dinner table. Could it be that they are chalk full of protein, vitamins and minerals or that they are so fun to eat. I say D – all of the above! These bowls go by many names balanced bowls, buddha bowls, pixie bowls, veggie bowls, rainbow bowls and my favorite as named by my daughter, unicorn food.
Let’s just go and grab some appetizers for lunch, said my girlfriend as we were deciding on how to celebrate her birthday during our limited window of woman-hood, not mommy-hood. Yes, you know that tiny window during the day when the babies are at mothers morning out and you can relax your shoulders and be a woman once again.
Yogi bowl…buddah bowl…pixie perfection?!? How bout we call it super simple, full of protein, good carbs and fresh veggies. Who could ask for anything more? While this is mostly a dinner “bowl” in our home they can be enjoyed for any meal. They are easy to prep, prepare, keep warm and save for leftovers.
