Is it really February? Like already? The answer is a bittersweet, yes. February is a short month, a fun month and a loveable month. After all, the big V Day falls in February and you gotta love that. It is also a short month and comes up on me way to quick letting me know Spring is on its way. So, I did something today that I have been wanting to do for months which is visit Avalon, a fun, lively outdoor dining, shopping and entertainment area which is growing monthly with new attractions and retailers.
Although every day for me is meatless “Monday” I like to challenge my friends and family who eat meat every day to one meatless or meat free day of the week. It just so happens that Meatless Monday has a nice, catchy ring to it. An example of what our most recent dinners are looking like and so quick and easy to pull together.
Hi, friends! It’s almost winter and Christmas time, cold and snowy. No, really I’m just kidding its actually quite balmy and nice outside so being inside the house making holiday crafts, watch movies, baking cookies and all things that I grew up doing just isn’t happening this year. Don’t get me wrong I would rather sit outside on the porch and read a book or go on a bike ride with the children but its Christmas time all over again. I guess it’s just watching my children have a vastly different wintertime experience than how I experienced winter as a child is … well, bittersweet.
When the winter months roll around please don’t feel like its time to bust out the crockpot and bunker down for a season of protein and potatoes, although I do love some potatoes. This Colorful Warm Quinoa Salad is filled with plenty of raw and crisp fruits and vegetables and the savory yet sweet dressing pulls it all together for one amazing meal or side dish.
When your girlfriend who you haven’t seen in a minute sends a photo via text of her backyard garden bounty with the caption, “Would you like any of these?”And the “these” are fresh jalapeños, tomatoes and lettuce you cant help but say, yes! Honestly, I will always be more excited to spend more time with her but all the better when she wants to share the fruits of her labor. We all need friends like that, friends who know what we love and what we will appreciate.
Saturday afternoons in the fall are meant for baking. Unless, that is, you are spending 5 hours at the sports field watching your little bundles play their hearts out in football and back to back soccer games. My how my single, newlywed and mom of tots days have changed. For the better? Of course its for the the better albeit busier it is definitely better.
